Ingredients
  

  • - 1 lb large shrimp peeled and deveined
  • - 1 red bell pepper chopped
  • - 1 yellow bell pepper chopped
  • - 1 red onion chopped
  • - ¼ cup olive oil
  • - 2 garlic cloves minced
  • - 1 tbsp smoked paprika
  • - 1 tsp dried oregano
  • - ½ tsp dried thyme
  • - Salt and black pepper to taste
  • - Lemon wedges for serving

Instructions
 

  • In a large bowl, mix olive oil, garlic, paprika, oregano, thyme, salt, and pepper.
  • Toss shrimp in marinade and let sit for 10–15 minutes.
  • Assemble kabobs by alternating shrimp, peppers, and onion on skewers.
  • Preheat grill to medium-high.
  • Grill kabobs for 2–3 minutes per side until shrimp are pink and opaque.
  • Serve with lemon wedges.
