For the Marinade

  • 1 medium Lemon Can substitute with lime if needed.
  • 2 cloves Garlic Fresh garlic is ideal.
  • 3 tablespoons Olive Oil Extra virgin preferred.
  • 1 tablespoon Dried Parsley Fresh parsley can elevate the taste.
  • 1 teaspoon Dried Thyme Fresh thyme is a great alternative.
  • 1 teaspoon Black Pepper Freshly ground is best.
  • 1 teaspoon Salt Adjust according to your taste.

For the Vegetable

  • 1 bunch Asparagus Can swap with broccoli or green beans.

For the Protein

  • 2 fillets Salmon Fillets Skin-on preferred for moisture.

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Zest and juice the lemon, then mince the garlic.
  • Whisk together the lemon juice, zest, minced garlic, dried parsley, thyme, and olive oil in a bowl; season with salt and pepper.
  • Trim the asparagus ends and dry them with a paper towel.
  • Line a baking sheet with parchment paper. Place the salmon skin-side down and pour two-thirds of the marinade over it.
  • Add the asparagus to the other side of the baking sheet, drizzling with the remaining marinade.
  • Bake for 12-13 minutes until the salmon is flaky and asparagus is tender.
  • Let rest for 2 minutes before plating.

Notes

For added presentation, garnish with fresh lemon slices before serving.
