Equipment

  • - Mixing bowl
  • - Frying pan or deep fryer
  • Tongs or slotted spoon
  • - Paper towels or wire rack

Ingredients
  

  • - 1 lb 450g small shrimp, peeled and deveined
  • - ½ cup mayonnaise
  • - ¼ cup Thai sweet chili sauce
  • - 3–5 drops Sriracha or other hot chili sauce
  • - ½ to ¾ cup cornstarch
  • - Neutral oil for frying
  • - Chopped scallions
  • - Lettuce leaves or rice for serving

Instructions
 

  • Mix mayo, sweet chili sauce, and Sriracha in a bowl. Set aside.
  • Pat shrimp dry and toss in cornstarch until evenly coated.
  • Heat oil in skillet or fryer to 350°F (175°C).
  • Fry shrimp in batches for 2–3 minutes until golden. Drain well.
  • Toss hot shrimp with sauce.
  • Serve over lettuce or rice, topped with scallions.

Notes

- Air fryer works too: 400°F for 8–10 minutes.
- Make it a rice bowl with cucumbers and carrots.
- Sub chicken or tofu for variations.
