Instructions

How to Make Berry Frozen Yogurt Bark

  • Start by washing your blueberries and drying them thoroughly to prevent ice crystals. Next, slice your strawberries thinly for even distribution and toast coconut in a skillet until golden brown.
  • Line a baking sheet with parchment paper, ensuring it extends over the edges. This will make it easy to lift and break the bark later.
  • In a mixing bowl, whisk together Greek yogurt, maple syrup, vanilla extract, lemon zest, and a pinch of salt until you have a smooth and creamy mixture.
  • Pour the yogurt blend onto the prepared baking sheet and spread it evenly to a thickness of about 1/4 to 1/2 inch.
  • Quickly scatter your fresh blueberries, thin strawberry slices, and toasted coconut over the yogurt mixture. Press them gently into the surface to secure them.
  • Place your baking sheet in the freezer for a minimum of 3 hours, or until the bark is completely solid.
  • Once frozen, let the bark sit at room temperature for 2-3 minutes for easier breaking into irregular, bite-sized pieces.
  • Optional: Drizzle melted dark chocolate over the bark for an extra touch of indulgence.

Notes

For the best results, aim for a thickness of 1/4 to 1/2 inch for even freezing. Customize your toppings to your liking.
