- 2 lb chicken breasts cubed
- 1 lb brussels sprouts halved
- 1½ tbsp olive or avocado oil
- Salt & pepper to taste
- ½ cup coconut aminos
- 1 tbsp rice vinegar
- 1 tbsp garlic minced
- ¼ tsp red pepper flakes
Heat oil in skillet over medium-high.
Add chicken and sprouts. Season with salt and pepper.
Sear for 3–4 mins until browned.
Add coconut aminos, vinegar, garlic, pepper flakes.
Simmer covered for 5–6 mins.
Rest 2 mins. Serve hot.
Use thighs for juicier meat.
Soy sauce or tamari work in place of coconut aminos.
Serve over rice, quinoa, or roasted veggies.
