Ingredients
  

  • 2 lb chicken breasts cubed
  • 1 lb brussels sprouts halved
  • tbsp olive or avocado oil
  • Salt & pepper to taste
  • ½ cup coconut aminos
  • 1 tbsp rice vinegar
  • 1 tbsp garlic minced
  • ¼ tsp red pepper flakes

Instructions
 

  • Heat oil in skillet over medium-high.
  • Add chicken and sprouts. Season with salt and pepper.
  • Sear for 3–4 mins until browned.
  • Add coconut aminos, vinegar, garlic, pepper flakes.
  • Simmer covered for 5–6 mins.
  • Rest 2 mins. Serve hot.

Notes

Use thighs for juicier meat.
Soy sauce or tamari work in place of coconut aminos.
Serve over rice, quinoa, or roasted veggies.
