How to Make Blueberry Heaven Cookies

  • Preheat the oven to 400°F (200°C).
  • Whisk together the flour, baking powder, and salt in a small bowl.
  • Thaw the frozen blueberries in the microwave for about 30 seconds or on the stovetop for 2-3 minutes, then let cool.
  • Cream the vegan butter and granulated sugar until light and fluffy.
  • Add the cooled blueberries and mix until fully incorporated.
  • Fold in the dry ingredients gradually, then mix in the white chocolate chips.
  • Chill the dough in the freezer for 30 minutes.
  • Shape the dough into 12 balls and place them on a baking sheet lined with parchment paper.
  • Bake for 10-13 minutes until the edges are slightly brown and the centers are soft.
  • Cool on a wire rack for 5-10 minutes before enjoying.

Notes

Serve warm with almond butter on top for an extra treat.
