Ingredients
  

  • - 1 32 oz bag frozen tater tots
  • - 8 large eggs
  • - 1 cup whole milk
  • - 2 cups shredded cheddar + mozzarella cheese
  • - 1 cup cooked breakfast sausage or bacon crumbled
  • - 4 green onions chopped
  • - Salt and black pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a large baking dish.
  • In a large bowl, whisk eggs and milk until frothy.
  • Stir in meat, cheese, onions, salt, and pepper.
  • Layer tater tots in the dish.
  • Pour egg mixture evenly over the tots.
  • Bake 30–35 minutes until golden and set in the center.
  • Rest 5 minutes before slicing and serving.

Notes

- Use hash browns instead of tater tots if preferred
- Add veggies or try different cheeses
- Assemble ahead and bake when ready
