Ingredients
  

For the Base

  • 4 tablespoons Unsalted Butter for greasing the dish
  • 8 Large Eggs
  • 2 cups Whole Milk or almond milk
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper

For the Filling

  • 1 pound Breakfast Sausage or turkey sausage
  • 1 medium Yellow Onion or shallots
  • 3 cups Frozen Shredded Hash Browns or fresh, grated potatoes
  • 2 cups Gruyère Cheese or Swiss or mozzarella
  • 1 cup Sharp Cheddar Cheese or yellow cheddar

For Garnishing

  • 2 tablespoons Sliced Chives or parsley or green onions
  • to taste Pure Maple Syrup/Hot Sauce for serving

How to Make Brunch Lasagna

  • Cook the Sausage: In a skillet over medium heat, crumble and brown the breakfast sausage until fully cooked, about 5-7 minutes.
  • Sauté the Onion: Add chopped yellow onion to the skillet and cook until translucent, about 3-4 minutes.
  • Crisp Hash Browns: In a separate pan, heat a little oil and fry the frozen hash browns until golden brown and crispy, about 8-10 minutes.
  • Layer the Ingredients: In a greased baking dish, spread half of the crispy hash browns as the base. Add half of the cooked sausage and onion, then half of the beaten eggs mixed with whole milk, and sprinkle half of the Gruyère and cheddar cheeses.
  • Repeat Layers: Add another layer with the remaining hash browns, sausage and onion, eggs, and finish with the rest of the cheeses.
  • Bake: Preheat the oven to 350°F (175°C) and bake for 45-50 minutes, or until the top is golden brown and set.
  • Serve: Let the brunch lasagna cool for about 10 minutes before slicing into squares. Serve warm with optional maple syrup or hot sauce.

Notes

Use fresh ingredients whenever possible for the best flavor. Broil for 2-3 minutes at the end for a gooey top.
