Instructions
How to Make Bunny Cake
Preheat your oven to 350°F (175°C) and grease two 8-inch cake pans with cooking spray.
In a large bowl, combine the light and dark brown sugars, neutral oil, eggs, and vanilla extract. Beat until smooth and well blended, around 2-3 minutes.
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and kosher salt.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Fold in the grated carrots.
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, until a toothpick comes out clean. Allow to cool in pans on a wire rack.
Once cooled, frost the cakes with a crumb coat and refrigerate for stability. Then add a final layer of frosting, covering with shredded coconut.
Decorate with jelly beans and Rice Krispies Treats to add fun bunny features.
Serve on a beautiful platter surrounded by seasonal decorations.
Notes
Add spring flowers around the cake for a festive touch.
