How to Make Bunny Cake

  • Preheat your oven to 350°F (175°C) and grease two 8-inch cake pans with cooking spray.
  • In a large bowl, combine the light and dark brown sugars, neutral oil, eggs, and vanilla extract. Beat until smooth and well blended, around 2-3 minutes.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and kosher salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Fold in the grated carrots.
  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, until a toothpick comes out clean. Allow to cool in pans on a wire rack.
  • Once cooled, frost the cakes with a crumb coat and refrigerate for stability. Then add a final layer of frosting, covering with shredded coconut.
  • Decorate with jelly beans and Rice Krispies Treats to add fun bunny features.
