  • 4 pieces Boneless Skinless Chicken Breasts Substitute with chicken thighs for juicier meat.
  • 2 tablespoons Olive Oil Divided for roasting.
  • 2 tablespoons Cajun Seasoning Adjust to taste for preferred spice level.
  • 2 pieces Sweet Potatoes Peeled and diced.
  • 2 cups Broccoli Florets Can swap for green beans, asparagus, or cauliflower.
  • 2 cups Cooked White Rice Opt for your favorite rice variety.
  • 2 pieces Sliced Avocado Best when served fresh.

For the Chipotle Sauce

  • 1/2 cup Mayonnaise or Plain Greek Yogurt Use yogurt for a tangier flavor.
  • 1 teaspoon Chipotle Chili Powder Substitute with canned chipotle peppers in adobo for more spice.
  • 1 teaspoon Garlic Powder A little goes a long way.
  • 1 tablespoon Lemon Juice Fresh juice works best.
  • 1 tablespoon Honey Adjust to preference.

How to Make Cajun Chicken & Sweet Potato Bowls

  • Preheat your oven to 425°F. Line sheet pans with parchment paper to keep everything from sticking.
  • Toss the sweet potatoes and broccoli florets in a large bowl with one tablespoon of olive oil and Cajun seasoning. Spread them out on one tray.
  • Coat the boneless skinless chicken breasts with the remaining olive oil and Cajun seasoning. Arrange the seasoned chicken on a separate tray for roasting.
  • Bake all ingredients in the preheated oven for 15-20 minutes, until chicken reaches an internal temperature of 165°F and sweet potatoes are tender.
  • Prepare the chipotle sauce while everything is baking. Mix together mayonnaise or Greek yogurt, chipotle chili powder, garlic powder, lemon juice, honey, salt, and black pepper until smooth and creamy.
  • Assemble your bowls! Start with a base of fluffy cooked white rice, then layer on the roasted chicken, sweet potatoes, and broccoli. Top with slices of avocado, chopped green onions, and chipotle sauce.

Notes

Garnish with additional Cajun seasoning for an extra kick. Store leftovers in airtight containers for up to 3 days. Keep the sauce separate to maintain freshness.
