How to Make Chickpea Cucumber Feta Salad

  • Start by draining and rinsing the chickpeas under cold water. This helps remove excess sodium and gives a fresher taste. Set them aside to let any water drain off.
  • While the chickpeas are draining, chop the cucumber, feta, red onion, and basil into bite-sized pieces. Aim for uniformity to ensure every bite is packed with flavor.
  • In a medium mixing bowl, combine the drained chickpeas, chopped cucumber, diced feta cheese, red onion, and minced basil. Gently stir to mix the ingredients evenly, letting each flavor shine.
  • In a small bowl or jar, combine the olive oil, white balsamic vinegar, lemon juice, minced garlic, dried parsley, Dijon mustard, salt, and pepper. Whisk or shake well until the mixture is smooth and well-combined.
  • Pour the dressing over the salad mixture and toss gently to ensure all the ingredients are coated. The colors will brighten, and the aroma will be irresistible!

Notes
