Ingredients
  

For the Yogurt Mixture

  • 2 cups Greek Yogurt full-fat recommended
  • 1/2 cup Peanut Butter can substitute with almond butter
  • 1/4 cup Honey maple syrup as vegan alternative
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Cocoa Powder use unsweetened for best flavor
  • 1 pinch Salt a tiny pinch is key

For the Chocolate Coating

  • 1 cup Chocolate Chips dairy-free for a vegan option
  • 2 tablespoons Coconut Oil can use butter as alternative

For the Topping

  • 1/4 cup Peanuts finely crushed, can use other nuts or seeds

Instructions
 

Preparation Steps

  • In a bowl, whisk together Greek yogurt, peanut butter, honey, vanilla extract, cocoa powder, and salt until the mixture is smooth and creamy.
  • Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each cavity about 3/4 full.
  • Place the filled molds in the freezer.
  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring frequently until the mixture is fully melted and smooth.
  • Remove the molds from the freezer and carefully pour the melted chocolate over each yogurt bite. Immediately sprinkle with finely crushed peanuts.
  • Return the molds to the freezer for about 2-3 hours or until the bites are fully set.

Notes

Optional: Drizzle extra melted chocolate on top for a decorative finish. For best results, use room temperature yogurt and peanut butter.
