Ingredients
  

For the Batter

  • 1/2 cup Unsalted Butter Softened
  • 1 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 2 large Eggs Room temperature
  • 1 teaspoon Vanilla Extract Pure extract recommended
  • 4 large Mashed Bananas Overripe for best results
  • 2 cups All-Purpose Flour Can substitute half with whole wheat flour
  • 1 teaspoon Baking Powder Fresh for optimal leavening
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon Freshly ground preferred
  • 1/2 teaspoon Salt To balance sweetness

For the Cinnamon Sugar Swirl

  • 1/4 cup Granulated Sugar Adjust to taste
  • 1 tablespoon Ground Cinnamon Combined with sugar for swirl

Preparation

  • Preheat your oven to 350°F (180°C) and prepare a 9x5-inch loaf pan. Grease the pan with nonstick spray and line the bottom with parchment paper for easy removal.
  • Cream together softened unsalted butter, granulated sugar, and light brown sugar in a mixing bowl until light and fluffy, about 3-4 minutes.
  • Incorporate room temperature large eggs and pure vanilla extract one at a time, mixing thoroughly after each addition. Fold in mashed bananas until smooth.
  • Whisk together all-purpose flour, baking powder, baking soda, salt, and fresh ground cinnamon in a separate bowl.
  • Combine the dry ingredients with the wet mixture gradually, mixing until just combined. Avoid overmixing.
  • Mix the sugar and ground cinnamon for the cinnamon sugar swirl in a small bowl until combined.
  • Layer the batter in the prepared loaf pan: pour half the batter, sprinkle half the cinnamon sugar mixture, add the remaining batter, and top with the cinnamon sugar.
  • Bake the loaf for 55-65 minutes until a toothpick inserted in the center comes out clean. Tent with foil if the top darkens too quickly.
  • Cool the banana bread in the pan for about 10 minutes before transferring it to a wire rack. Cool completely for best texture and flavor.
