Ingredients

Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • Dice Yukon gold potatoes into ½-inch cubes and chop bell peppers and onion.
  • Combine the diced vegetables in a large baking dish with olive oil, Italian seasoning, salt, cayenne, and garlic powder.
  • Roast the vegetables in the oven for 15 minutes or until they're soft and caramelized.
  • Add sliced chicken sausage to the baking dish and return it to the oven for another 15 minutes.
  • Blend cottage cheese and eggs in a blender until smooth.
  • Pour the egg mixture over the roasted vegetables and sausage, then sprinkle with cheddar cheese.
  • Bake for 10-15 minutes until the eggs are set but still moist.
  • Cool the filling for at least 10 minutes.
  • Warm tortillas in a dry skillet or microwave.
  • Portion filling onto each tortilla, fold in the sides, and roll tightly.

Notes

Optional: Serve with a dollop of sour cream or your favorite salsa for added flavor!
