Ingredients
  

For the Soup Base

  • 2 tbsp Olive Oil Use extra virgin for added flavor.
  • 2 stalks Celery Chopped into 1/4-inch pieces; can substitute with bell peppers or green beans.
  • 1/2 Onion Diced; can use shallots for a milder flavor.
  • 3 cloves Garlic Minced; can use garlic powder if fresh isn't available.
  • 1/2 tsp Italian Seasoning Can substitute with dried basil and oregano.

For the Protein & Creaminess

  • 1 lb Ground Turkey Lean and healthy; can substitute with chicken or lean beef.
  • 1 can White Beans Rinsed and drained; can replace with chickpeas or kidney beans.

For the Veggies

  • 1 Red Bell Pepper Diced; any sweet pepper can be used.
  • 2 Carrots Peeled and sliced into 1/4-inch rounds; can substitute with parsnips.
  • 2 cups Spinach Can substitute with kale or Swiss chard.

For the Broth & Pasta

  • 5 cups Chicken Broth Low-sodium options available.
  • 1 cup Water Can replace with more broth.
  • 1.5 cups Fusilli Pasta Can substitute with any small pasta shape.

To Finish It Off

  • 1 tbsp Lemon Juice Can use lime juice as a substitute.
  • Salt and Pepper Adjust to taste.

Instructions
 

Preparation

  • Start by chopping celery, onion, garlic, bell pepper, and carrots. Rinse the white beans, and measure the broth, water, pasta, lemon juice, and spinach.

Cooking

  • Heat olive oil in a large pot over medium heat. Add the chopped celery and diced onion, cooking until they become translucent and fragrant, about 4-5 minutes.
  • Stir in the minced garlic and Italian seasoning, cooking for about 30 seconds until fragrant.
  • Add the ground turkey, breaking it apart with a spatula. Cook until it's no longer pink, around 4-5 minutes.
  • Add the rinsed white beans, sliced carrots, chicken broth, and water to the pot. Stir well and bring to a boil, then reduce heat and simmer for 10 minutes.
  • Incorporate the fusilli pasta into the pot, cooking until tender, about 10 minutes.
  • Stir in the fresh lemon juice, diced red bell pepper, and spinach. Cook until the spinach wilts, about 2 minutes.
  • Taste and adjust salt and pepper as needed. Serve hot.

Notes

For an extra touch, serve with a drizzle of olive oil or fresh herbs.
