  • 1 tablespoon Salt For boiling water

  • 8 ounces Mascarpone Cheese Room temperature
  • 4 tablespoons Salted Butter Softened
  • 1/2 cup Heavy Cream Warm before adding

Basic Instructions

  • Start by peeling and cutting russet potatoes into 2-inch chunks.
  • Bring a pot of salted water to a rolling boil, then add the potato chunks. Cook until fork-tender, around 10-12 minutes.
  • While the potatoes cook, bring the mascarpone cheese and butter to room temperature.
  • Drain the cooked potatoes thoroughly, then return them to the hot pot.
  • Using a potato masher, gently mash the potatoes to your desired texture.
  • Fold in the warm mascarpone, softened butter, heavy cream, Parmesan cheese, and a pinch of salt until creamy.
  • Taste and adjust salt as needed.
  • Transfer to a bowl and serve immediately.
