Ingredients
  

For the Chili

  • 2 cans Cannellini Beans, drained and rinsed
  • 1 lb Ground Beef (90/10)
  • 1 medium Yellow Onion, diced into 1/4-inch pieces
  • 3 cloves Garlic, minced
  • 1 can Chopped Green Chiles
  • 1 tbsp Ground Cumin freshly ground
  • 1 tbsp Dried Oregano
  • 1 dash Cinnamon
  • 1 tsp Salt adjust to taste
  • 1/2 tsp White Pepper to taste
  • 1/4 tsp Cayenne Pepper adjust according to preference
  • 4 cups Chicken Broth or vegetable broth for a vegetarian option

For the Toppings

  • 1 cup Monterey Jack Cheese, shredded add gradually
  • 1/4 cup Fresh Cilantro, chopped for garnish
  • 1/2 cup Sour Cream for serving

Cooking Instructions

  • In a large pot or Dutch oven, heat it over medium-high heat. Brown the ground beef for about 8-10 minutes, breaking it up with a spoon. Drain excess fat if necessary.
  • Add the diced yellow onion to the pot. Cook until softened, about 4-5 minutes. Then, stir in the minced garlic and cook for 1 more minute.
  • Incorporate the browned beef, followed by the ground cumin, oregano, cinnamon, salt, white pepper, and cayenne pepper. Stir everything together.
  • Mix in the chopped green chiles, cooking for an additional 3-4 minutes.
  • Gently mix in the drained cannellini beans, mashing half for creaminess while leaving the rest whole.
  • Add the chicken broth and bring the mixture to a gentle simmer. Stir occasionally for about 3-4 minutes.
  • Gradually mix in the shredded Monterey Jack cheese until melted and fully incorporated.
  • Continue to simmer for an additional 5-7 minutes, adjusting the consistency to your liking.
  • Ladle portions into bowls, topping each with a dollop of sour cream, extra cheese, and a sprinkle of fresh cilantro.

Notes

Optional: Add a squeeze of lime juice for an extra zing.
