For the Casserole

  • 2 teaspoons Olive oil to help brown the turkey
  • 1 pound Ground turkey 85% lean for health
  • 1.5 teaspoons Kosher salt divided
  • 2 tablespoons Butter for richness
  • 0.5 small Yellow onion finely diced
  • 2 cloves Garlic minced
  • 2 tablespoons All-purpose flour for sauce thickening
  • 1.5 cups Chicken broth low-sodium
  • 0.5 cup Whole milk for creaminess
  • 3 cups Broccoli florets chopped
  • 1.75 cups Cheddar cheese shredded, divided
  • 0.25 teaspoon Black pepper freshly ground
  • 2 cups Cooked white rice long grain

Steps to Prepare

  • Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish and set aside.
  • Brown the turkey by heating olive oil in a large skillet over medium heat. Add ground turkey and ¼ teaspoon of salt, cooking for 5-7 minutes until browned. Transfer to a plate and keep warm.
  • Sauté onions by adding butter, diced onion, and ¼ teaspoon salt into the skillet. Cook for 4-5 minutes until soft, then add minced garlic and cook for 30 seconds.
  • Thicken the sauce by lowering heat, adding flour to the onion mixture, cook for 1 minute, then whisk in chicken broth and milk until smooth. Let simmer for 2-3 minutes until slightly thickened.
  • Add broccoli to skillet, simmer for another 2-3 minutes until bright green. Stir in 1 cup of cheddar cheese until melted. Season with 1 teaspoon salt and black pepper.
  • Combine turkey and cooked rice in the baking dish. Pour creamy sauce and broccoli mixture over, mixing to ensure even distribution. Top with remaining ¾ cup cheddar cheese.
  • Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until bubbly and golden brown. Rest for a few minutes before serving.

Notes

Optional: Garnish with fresh parsley before serving.
