For the Base

  • 2 tablespoons Olive Oil Substitute with vegetable oil if needed.
  • 1 medium Onion Finely diced for even cooking.
  • 1 pound Ground Beef Can be replaced with ground turkey or plant-based meat.
  • 3 cloves Garlic Freshly minced is preferred.
  • 1 tablespoon Italian Herbs Pre-mixed Italian seasoning can be used.
  • 2 tablespoons Tomato Paste Can substitute with double the amount of marinara sauce.
  • to taste Salt Adjust to taste based on ingredient variations.
  • to taste Pepper Adjust to taste based on ingredient variations.
  • 1 cup Marinara Sauce Rao's Homemade is recommended for authenticity.
  • 4 cups Beef Broth Can substitute with vegetable broth.

For the Noodles and Veggies

  • 8 ounces Lasagna Noodles Broken into 1-inch pieces.
  • 2 cups Spinach Can swap with kale or another leafy green.

For the Creamy Finish

  • 1 cup Cottage Cheese Any style works; full-fat provides the richest texture.
  • 1/2 cup Parmesan Cheese Use grated or shredded.

Instructions
 

Steps to Prepare

  • Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5-7 minutes until it turns translucent and fragrant.
  • Raise the heat and toss in the ground beef. Cook until it’s browned, approximately 5-7 minutes.
  • Stir in the freshly minced garlic, Italian herbs, tomato paste, salt, pepper, and red pepper flakes. Cook for 1 minute.
  • Pour in the marinara sauce and beef broth. Bring to a boil, then lower the heat and let it simmer.
  • Break the lasagna noodles into 1-inch pieces and add them to the soup. Cook for 1-2 minutes less than package directions.
  • Toss in the fresh spinach and stir for about 1 minute until it wilts.
  • Remove from heat and gently stir in the cottage cheese.
  • Dish into bowls and top with freshly grated parmesan cheese.
