Ingredients
  

For the Mashed Potatoes

  • 1 large Yukon Gold Potato Provides a naturally creamy and buttery texture
  • 1 clove Garlic minced
  • Kosher Salt adjust to taste
  • 1 tbsp Salted Butter unsalted butter can be used
  • 1/2 cup Whole Milk warmed, substitute with non-dairy if desired

For the Filling

  • 2 tbsp Onion finely diced
  • 1/2 tbsp Olive Oil can substitute with vegetable oil
  • 1/4 tsp Italian Seasoning
  • 1 tsp Worcestershire Sauce
  • 1/4 cup Frozen Mixed Vegetables fresh can be used
  • 4 oz Ground Lamb can substitute with ground beef or turkey
  • 1/4 cup Beef Broth can use vegetable broth for a lighter option

Preparation

  • Begin by placing peeled and chunked Yukon Gold potatoes into a pot filled with cold, salted water. Bring it to a boil and cook until tender, which should take about 15 minutes.
  • While your potatoes are cooking, preheat your oven to 350°F.
  • In a skillet, heat the olive oil over medium heat. Add the finely diced onion and sauté for 2 minutes.
  • Mix in the minced garlic, ground lamb, salt, and Italian seasoning; cook until the meat is browned, roughly 4 minutes.
  • Stir in the Worcestershire sauce, frozen mixed vegetables, and beef broth. Bring the mixture to a simmer and reduce heat. Let it cook for about 10 minutes until the filling thickens.
  • Once the potatoes are tender, drain them and return them to the pot. Mash them with the warmed milk, minced garlic, butter, and a bit of salt until smooth.
  • Lightly grease a ramekin to prevent sticking. Spoon in the meat filling, then generously dollop and smooth the creamy mashed potatoes over the top.
  • Place the assembled pie in the oven and bake for 20 minutes, or until the top is golden and the filling is heated through.
  • After baking, let the Shepherd's Pie cool for a few minutes before serving.

Notes

For extra flavor, sprinkle shredded cheese on top before baking for a delicious cheesy crust.
