  • 1 cup Half-and-Half or mix whole milk and heavy cream
  • 1 teaspoon Thyme fresh herbs will enhance flavors
  • 1 teaspoon Italian Seasoning for aromatic complexity

For the Heartiness

  • 1 pound Gnocchi or small pasta for low-carb alternative
  • 1/4 cup Parmesan Cheese or nutritional yeast for dairy-free
  • 2 cups Shredded Chicken or canned chickpeas for vegetarian
  • 2 cups Fresh Spinach or kale, adjust cooking times

  • Sauté chopped onion, carrots, and celery, along with salt and pepper, for about 5-7 minutes until softened.
  • Add minced garlic and cook for 1 minute, stirring constantly until fragrant.
  • Deglaze the pan by pouring in the wine, allowing it to simmer for 2-3 minutes until mostly evaporated.
  • Stir in the flour and cook for 1-2 minutes, ensuring it combines well to thicken the soup.
  • Whisk in the chicken stock gradually, allowing it to simmer and thicken.
  • Add half-and-half and sprinkle in thyme and Italian seasoning; gently simmer for a few minutes.
  • Toss in the gnocchi and let simmer for 3-5 minutes, or until the gnocchi is tender and floating.
  • Mix in the Parmesan, shredded chicken, and fresh spinach; simmer for another 2-3 minutes.
  • Taste and adjust seasoning with salt and pepper as needed; serve hot.

Notes

For added flavor, drizzle with a bit of olive oil before serving.
