  • In a large pot, heat a splash of cooking oil over medium heat. Brown the beef stew meat in batches for 3-4 minutes on each side until golden brown, then season with salt and pepper.
  • Remove the browned beef from the pot and pour in beef stock, scraping up the delicious browned bits left behind.
  • Melt butter in the pot, then add sliced yellow onions and a sprinkle of sugar. Cook them low and slow for about 30-40 minutes, stirring occasionally, until they turn a beautiful deep brown color.
  • Stir in minced garlic and cook until fragrant, about 1 minute. Sprinkle in flour and mix for 1-2 minutes to create a light roux.
  • Return the beef and deglazing liquid to the pot. Add the remaining beef stock, dry white wine, Worcestershire sauce, bay leaf, and pepper. Stir well to combine.
  • Cover the pot and let the soup simmer for about 2 hours on low heat.
  • Ladle the soup into oven-safe bowls. Top each bowl with slices of toasted French baguette and a generous amount of Gruyere cheese.
  • Place the bowls under the broiler for 2-3 minutes until the cheese is melted and slightly browned. Serve immediately.
