How to Make Dill Pickles

  • Slice the Persian cucumbers lengthwise into quarters for spears or thinly slice them horizontally for chips.
  • Gently divide the cucumber slices among 4 (8-ounce) or 2 (16-ounce) jars. Add the halved garlic, mustard seeds, peppercorns, and fresh dill sprigs to each jar.
  • In a medium saucepan, heat the water, vinegar, cane sugar, and sea salt over medium heat. Stir until both the sugar and salt dissolve, then let cool slightly before pouring over the cucumbers.
  • Allow the filled jars to sit at room temperature until cool. Cover tightly and refrigerate to pickle.
  • For the best flavor, wait 5 or 6 days for the spices and flavors to develop.

Notes

Store in the refrigerator for up to 4 weeks. Can freeze for up to 6 months, but texture may change.
