How to Make Creamy Asparagus Soup

  • In a large pot, melt butter over medium heat. Add the minced garlic and sauté it until fragrant, about 1 minute.
  • Add the trimmed asparagus pieces to the pot, seasoning them with kosher salt and freshly ground black pepper. Sauté until the asparagus turns golden, roughly 5-7 minutes.
  • Pour in the low-sodium chicken broth and bring the mixture to a simmer. Cook until the asparagus is tender, which will take about 10 minutes.
  • Using an immersion blender or a regular blender, puree the soup until it reaches a silky smooth consistency.
  • Return the pureed soup to the pot, then gently stir in the heavy cream and chopped chives. Heat until warm but do not boil.
