Cooking Instructions

  • Heat the extra-virgin olive oil in a large pot over medium heat. Add the chopped onion and sea salt, sautéing until soft and translucent, about 5-8 minutes.
  • Add the butternut squash cubes to the pot. Stir occasionally, cooking until they start to soften, approximately 8-10 minutes.
  • Stir in the minced garlic, fresh sage, rosemary, and ginger. Cook for about 30 seconds to 1 minute until fragrant.
  • Pour in vegetable broth and bring the mixture to a boil. Lower the heat and simmer until the squash is tender, around 20-30 minutes.
  • Allow the soup to cool slightly, then blend until smooth. Modify broth for desired consistency.
  • Taste and adjust seasoning with salt and pepper. Serve garnished with chopped parsley and toasted pepitas.

Notes
