Ingredients
  

  • **For the soup base:**
  • - 1 tbsp olive oil
  • - ½ onion diced
  • - 4 garlic cloves minced
  • - ½ cup sun-dried tomatoes chopped
  • - 2 tbsp tomato paste
  • - 6½ cups chicken broth
  • - 2 tsp Italian seasoning
  • - ½ tsp red pepper flakes
  • - 2 tsp salt
  • - ½ tsp black pepper
  • **For the finish:**
  • - 2–3 cups shredded cooked chicken
  • - ¾ cup half & half
  • - 1 package Boursin garlic & herb cheese
  • - ¼ cup grated Parmesan cheese
  • - 3 cups baby spinach chopped
  • - 12 oz shell pasta
  • **To serve:**
  • - Fresh parsley chopped
  • - Extra Parmesan optional

Instructions
 

  • Heat olive oil in a large pot. Sauté onion and garlic until soft.
  • Add sun-dried tomatoes and tomato paste. Cook for 1–2 minutes.
  • Pour in chicken broth. Add spices. Bring to a boil.
  • Stir in pasta and cook until just al dente.
  • Reduce heat. Add chicken, spinach, Boursin, half & half, and Parmesan. Stir gently until creamy and melted.
  • Garnish with parsley and serve hot.

Notes

- Add Boursin at low heat to prevent curdling
- Pasta can be cooked separately if preferred
- Store leftovers in the fridge for up to 4 days
