How to Make Creamy Pesto Sauce

  • Combine all ingredients except olive oil in a food processor until finely minced.
  • Slowly pour the olive oil into the mixture while processing to create a smooth pesto.
  • Taste and adjust seasoning with salt or lemon juice if desired.
  • Warm the heavy cream in a saucepan over medium heat until it simmers.
  • Stir in the pesto and cook for 1-2 minutes until well mixed.
  • Remove from heat and stir in freshly grated Parmesan, adjusting salt and pepper to taste.

Notes

For a thinner sauce, add a splash of pasta water when mixing in the pesto. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for 3 months.
