Directions

  • Start by dicing your onion and mincing the garlic. Boil salted water in a large pot for the pasta.
  • Add the penne to the boiling water and cook it for 1-2 minutes less than package directions. Reserve 1 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent.
  • Add the ground turkey to the skillet and cook until there’s no pink left, about 5-7 minutes.
  • Stir in minced garlic, salt, pepper, and Italian seasoning. Sauté for about a minute.
  • Lower the heat and add unsalted butter, allowing it to melt. Sprinkle in flour, stirring for 1-2 minutes to form a roux.
  • Pour in chicken broth and tomato sauce, stirring until smooth. Let simmer for 3-4 minutes.
  • Mix in cooked penne and half and half, adjusting the sauce's thickness with reserved pasta water.
  • Stir in half of the mozzarella and cheddar cheese until melted. Transfer to a baking dish, topping with remaining cheese.
  • Cover with foil and bake at 350°F for 8-10 minutes, until cheese is melted. Garnish with parsley and chili flakes.

Notes
