Ingredients
  

For the Chicken

  • 4 pieces Boneless skinless chicken breasts Thighs can also be used for added flavor.
  • 1 teaspoon Kosher salt Adjust to taste, can substitute with sea salt.
  • 1 teaspoon Freshly ground black pepper White pepper provides a milder flavor.

For the Sauce

  • 2 tablespoons Extra-virgin olive oil Refined oil is a substitute for a higher smoke point.
  • 2 tablespoons Butter Replace with olive oil for a dairy-free variation.
  • 4 cloves Garlic, minced Adjust based on your garlic affinity.
  • 1 cup Cherry tomatoes, halved Regular tomatoes can be used if preferred.
  • 2 cups Baby spinach Consider kale or arugula as replacements.
  • 1 cup Heavy cream Half-and-half offers a lighter version.
  • ½ cup Freshly grated Parmesan Nutritional yeast can be a dairy-free alternative.

For Garnishing

  • 1 whole Lemon wedges Fresh herbs also make a great garnish option.

Cooking Steps

  • Heat the skillet by heating 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat until it’s nice and slick, about 1-2 minutes.
  • Season 4 boneless skinless chicken breasts with kosher salt and freshly ground black pepper. Add them to the skillet, cooking each side for about 8 minutes until golden brown and cooked through. Remove the chicken from the skillet and cover to keep warm.
  • Using the same skillet, melt 2 tablespoons of butter over medium heat. Once melted, add 4 minced garlic cloves and sauté for about 1 minute until fragrant.
  • Stir in 1 cup of halved cherry tomatoes, along with a pinch of salt and pepper. Cook for about 3-4 minutes, until the tomatoes begin to burst.
  • Add about 2 cups of baby spinach to the skillet, letting it wilt down for a minute.
  • Pour in 1 cup of heavy cream and mix in ½ cup of freshly grated Parmesan cheese, stirring until the mixture simmers and thickens slightly.
  • Return the cooked chicken to the skillet, allowing it to heat through in the sauce for an additional 5-7 minutes. Serve garnished with lemon wedges.

Notes
