Ingredients

For the Chili Base

  • 1.5 lbs Ground Beef For a leaner option, choose 90/10 or 93/7 blends; drain excess fat if using a fattier cut.
  • 1 medium Yellow Onion Red onion can be used for a sharper flavor.
  • 3 cloves Garlic Minced, shallots can be used for a milder taste.
  • 8 oz Chopped Green Chiles Substitute with diced jalapeños for more spice.
  • 4 cups Chicken Broth Vegetable broth can be used for a vegetarian option.
  • Cannellini Beans Use any white bean like Great Northern as a substitute.

For the Seasoning

  • 1 tbsp Ground Cumin Use coriander for a different flavor profile.
  • 1 tbsp Dried Oregano Marjoram can also work in a pinch.
  • 1/2 tsp Cinnamon It's best not to skip this for flavor depth.
  • 1/4 tsp White Pepper Black pepper can be substituted as well.
  • 1/4 tsp Cayenne Pepper Omit for a milder chili.

For the Toppings

  • 1.5 cups Monterey Jack Cheese Shredded, cheddar cheese can be an alternative.

  • Fresh Cilantro Green onions work as a substitute.

Instructions

Cooking Steps

  • Begin by heating a large pot over medium-high heat. Once hot, add the ground beef and cook for about 8-10 minutes, stirring occasionally, until it’s browned. Drain any excess fat and transfer the beef to a plate.
  • In the same pot, add the diced yellow onion. Sauté for 4-5 minutes until softened and translucent. Then, stir in the minced garlic and cook for an additional minute, allowing the flavors to develop.
  • Return the browned beef to the pot with the onions and garlic. Add the ground cumin, dried oregano, cinnamon, white pepper, and cayenne pepper. Stir for 1-2 minutes to bloom the spices, enhancing the flavor.
  • Next, stir in the chopped green chiles and allow them to cook for another 3-4 minutes, releasing their delightful flavor and mild heat into the mixture.
  • Gently mix in the rinsed cannellini beans. To achieve a creamy texture, mash about half of the beans against the side of the pot, allowing the chili to thicken beautifully.
  • Pour in the chicken broth and bring the chili to a simmer. Stir occasionally and let it cook for around 10 minutes, allowing all the flavors to meld together.
  • After simmering, add shredded Monterey Jack cheese into the pot. Stir gently until it's completely melted and incorporated into the chili, enhancing the richness.
  • Ladle the warm chili into bowls and top with a dollop of sour cream, additional shredded cheese, and fresh cilantro. Allow your family and friends to customize their bowls to their liking!
