Ingredients
  

  • **Filling:**
  • - 3 breakfast sausage links crumbled
  • - ¼ onion chopped
  • - 2 tbsp olive oil
  • - 4 eggs lightly beaten
  • **Assembly:**
  • - 2 pita rounds
  • - ½ tomato diced
  • - ½ cup chopped spinach
  • - ½ cup shredded cheddar cheese
  • - 1 avocado sliced (add after baking)
  • - Salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet.
  • Cook sausage in skillet until browned. Remove.
  • Sauté onion 5 minutes. Set aside. Add oil, scramble eggs until just set.
  • Place pita on baking sheet. Top with sausage, eggs, onion, tomato, spinach, and cheese.
  • Bake 10 minutes. Add avocado slices before serving.
