Preparation Steps

  • Wash all produce under cool running water.
  • Slice the celery into thin crescents, about ΒΌ inch thick.
  • Halve the cherry tomatoes and finely dice the red onion.
  • Finely chop the fresh parsley and combine with the chopped celery, tomatoes, and onion in a mixing bowl.
  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the vegetable mixture and toss carefully.
  • Sprinkle optional slivered almonds on top before serving.
  • Serve immediately or chill in the refrigerator.

Notes

For best results, add dressing just before serving to maintain crispness. Garnish with extra parsley if desired.
