Ingredients
  

For the Potatoes

  • 1.5 pounds Yukon Gold Fingerling Potatoes or red/purple potatoes
  • 3 tablespoons Olive Oil or avocado oil

For the Seasoning

  • 0.5 cups Freshly Grated Parmesan Cheese or Pecorino Romano
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Paprika
  • 1 teaspoon Black Pepper adjust to taste
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Lemon Pepper optional

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • Baste the bottom of a 9x13 glass baking dish with olive oil.
  • Mix the grated Parmesan cheese with garlic powder, paprika, black pepper, salt, and lemon pepper in a bowl. Sprinkle over the oiled dish.
  • Arrange the potatoes cut side up on top of the cheese layer. Spray the tops with olive oil and season with salt and pepper.
  • Bake for 30 minutes, or until the potatoes are tender and the top is golden-brown.
  • Let sit for 5 minutes before inverting to serve with crispy side up.

Notes

Serve with a sprinkle of fresh herbs for added flavor.
