How to Make Crispy Rice Salmon Bites

  • Begin by rinsing the 2 cups of short grain rice under cold water. Cook it according to the package instructions until perfectly tender and fluffy.
  • While the rice cooks, combine 3 tablespoons of rice vinegar, 3 tablespoons of granulated sugar, and 1 ½ teaspoons of kosher salt in a small saucepan. Warm over medium-low heat, whisking until dissolved.
  • Once the rice is done, carefully pour the vinegar mixture over it. Use a rice paddle to gently fan and mix until the rice is evenly coated.
  • Line an 8-by-8-inch baking pan with plastic wrap and press the seasoned rice into the pan. Cover with another piece of plastic wrap, then freeze for 3 hours to set.
  • After freezing, remove the rice from the pan and cut it into 18 rectangles (6 columns by 3 rows) to form your crispy bases.
  • In a wide-rimmed pan, heat neutral, high-heat oil over medium heat until about ½-inch deep.
  • Carefully fry the rice blocks in batches, turning them until they are golden brown and crispy—about 1 to 2 minutes on each side.
  • Transfer the fried rice blocks to a paper towel-lined plate to cool, allowing excess oil to drain away.
  • Once the blocks have cooled, top each with a slice of avocado, a spoonful of spicy salmon, a thin jalapeño slice, a drizzle of toasted sesame oil, sweet chili sauce, and sprinkle with toasted sesame seeds.
