Ingredients
  

For the Chickpeas and Edamame

  • 15 oz Chickpeas Canned, drained and rinsed
  • 16 oz Edamame Thawed and dried

For the Seasoning

  • 1.5 tbsp Olive Oil Can substitute with avocado oil
  • 3/4 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Black or cayenne pepper
  • 1/4 tsp Smoked Paprika Regular paprika is a milder alternative

Preparation Steps

  • Drain and rinse the chickpeas under cold water and pat them dry with a kitchen towel.
  • If using frozen edamame, allow them to thaw completely and pat them dry.
  • In a bowl, combine chickpeas and edamame. Drizzle with olive oil, sprinkle salt, pepper, and smoked paprika, then toss to coat evenly.
  • Preheat oven to 425°F (220°C).
  • Spread the mixture in a single layer on a baking sheet.
  • Roast for about 20 minutes, stirring halfway, until golden and crispy.
  • Let cool for a few minutes before serving.

Notes

For added flavor, sprinkle with nutritional yeast after roasting.
