Ingredients
  

  • - 1½ lbs chicken breasts
  • - 1 small onion diced
  • - 2 carrots sliced
  • - 2 celery stalks diced
  • - 3 garlic cloves minced
  • - 1 tsp thyme
  • - 1 tsp Italian seasoning
  • - 4 cups chicken broth
  • - 1 tsp salt
  • - ½ tsp pepper
  • - 1 cup half and half
  • - 1 tbsp cornstarch optional
  • - 1 16 oz pkg potato gnocchi
  • - 2 cups baby spinach
  • - ¼ cup Parmesan cheese optional
  • - Parsley for garnish

Instructions
 

  • Add chicken, veggies, garlic, broth, and seasoning to crockpot.
  • Cook on LOW 6–7 hours or HIGH 3–4 hours.
  • Remove chicken, shred, return to pot.
  • Add half and half and gnocchi. Cook 30 min on HIGH.
  • Stir in spinach until wilted. Add Parmesan.
  • Serve warm, garnished with parsley or cheese.

Notes

- Freeze without gnocchi and add fresh when reheating
- For a richer flavor, use heavy cream instead of half and half
- Add cooked bacon or mushrooms for extra heartiness
