Ingredients
  

  • - 1½ lbs boneless skinless chicken breasts or thighs
  • - 1 tbsp olive oil
  • - 1½ cups low-sodium chicken broth
  • - 2 tbsp cornstarch
  • - 3 cloves garlic minced
  • - 1½ tsp Italian seasoning
  • - ½ tsp paprika
  • - ½ tsp onion powder
  • - ½ tsp salt
  • - ¼ tsp black pepper
  • - ½ cup sun-dried tomatoes chopped
  • - ½ cup heavy cream or substitute
  • - ⅓ cup grated Parmesan cheese
  • - Optional: fresh basil Parmesan, red pepper flakes

Instructions
 

  • Sear chicken in olive oil for 2–3 minutes per side.
  • In slow cooker, whisk broth with cornstarch. Add garlic, seasonings.
  • Place chicken and sun-dried tomatoes in the slow cooker.
  • Cover and cook on LOW for 3–4 hours.
  • Remove chicken. Stir in cream and Parmesan. Return chicken and coat.
  • Serve with sauce over pasta, rice, or veggies. Garnish as desired.

Notes

- Don’t overcook; 3–4 hours on LOW is plenty
- Not freezer-friendly due to dairy
- Dairy-free options work well with vegan cream alternatives
