Ingredients
  

Turkey Mixture

  • 1 pound Ground Turkey Substitute with chicken or beef if desired.
  • 3 tablespoons Soy Sauce Use tamari for gluten-free.
  • 1 tablespoon Cornstarch Omit for gluten-free.
  • 1 tablespoon Canola Oil Any neutral oil or sesame oil can be used.

Vegetables

  • 8 ounces Mushrooms Choose shiitake or button.
  • 4 stalks Green Onions Separate green and white parts.
  • 4 cups Broccoli Coleslaw Shredded cabbage or more carrots can be used.
  • 2 cups Carrots Pre-shredded or fresh.

Seasoning and Flavor

  • 1 tablespoon Ginger Fresh preferred.
  • 3 cloves Garlic Fresh garlic is best.
  • 1 tablespoon Rice Vinegar Apple cider vinegar can substitute.
  • 1 tablespoon Chili Paste Adjust according to spice preference.
  • 1 tablespoon Sesame Oil Add at the end for freshness.
  • 1/2 teaspoon Black Pepper Adjust to taste.
  • 1 teaspoon Granulated Sugar Can substitute with honey.

Optional Serving Base

  • 2 cups Brown Rice/Quinoa/Cauliflower Rice Cauliflower rice is a low-carb option.

Preparation

  • Start by mincing garlic and grating ginger. Slice the mushrooms, and chop the green onions, separating the white/light green from the dark green parts for later use.
  • In a bowl, whisk together soy sauce and cornstarch. Add the ground turkey and let it marinate for about 10 minutes.
  • Heat canola oil in a large skillet over high heat. Add the marinated turkey and cook until no longer pink, about 5 minutes.
  • Toss in the sliced mushrooms and the white/light green parts of the green onions. Sauté for about 2 minutes until the mushrooms soften.
  • Lower heat to medium-low, then stir in the minced garlic and grated ginger. Cook for about 30 seconds.
  • Add the broccoli coleslaw and carrots to the skillet. Stir-fry for 2 minutes.
  • Combine soy sauce, rice vinegar, chili paste, sesame oil, black pepper, and sugar in a small bowl. Pour this over the turkey and veggies, cooking for an additional minute.
  • Serve over brown rice, quinoa, or cauliflower rice, garnished with dark green sliced parts of the green onions.

Notes

Optional: Drizzle with sriracha for an extra kick. Adjust spice level according to preference.
