  • 2 tablespoons All-Purpose Flour spoon & level for accuracy
  • 1 teaspoon Instant Espresso Powder optional, can substitute with instant coffee

How to Make Chocolate Lava Cakes for Two

  • Preheat your oven to 425°F (218°C) and gently spray two 6-ounce ramekins with nonstick cooking spray. Place the ramekins on a baking sheet for easy handling.
  • In a microwave-safe bowl, melt the unsalted butter and semi-sweet chocolate together. Stir every 20-30 seconds until completely smooth.
  • Add the powdered sugar to the melted chocolate and whisk until fully incorporated. Then add the large egg, large egg yolk, and vanilla extract, stirring until combined.
  • Gently fold in the all-purpose flour and optional espresso powder. Be careful not to overmix; a light consistency is desired.
  • Evenly divide the batter into prepared ramekins and bake for about 12 to 14 minutes, looking for firm edges and soft centers.
  • Let the cakes stand for about 1 minute, then carefully invert them onto plates to serve while still warm.
