  • Prepare the double boiler: Fill a pot with about 1" of water and bring it to a boil. In a mixing bowl that fits into the pot, whisk together the egg yolks and granulated sugar until well combined and slightly foamy.
  • Whisk until pale: Once the water starts boiling, turn off the heat and place the bowl on top of the pot to create a double boiler. Whisk the egg mixture for about 5 minutes, until the sugar dissolves and it becomes pale in color.
  • Mix in mascarpone: Remove the bowl from the pot and add the softened mascarpone cheese. Whisk until smooth and silky, ensuring there are no lumps. Set this creamy mixture aside.
  • Whip the cream: In a separate bowl, combine the whipping cream, matcha powder, and vanilla extract. Whip until medium peaks form, creating a fluffy texture that will lighten up your dessert.
  • Fold in the cream: Now, gently fold the whipped cream into the mascarpone mixture until no streaks remain. You want this to be light and airy, so be gentle! Set this aside for layering.
  • Make the matcha soak: In a shallow bowl, whisk together matcha powder, granulated sugar, and hot water until slightly frothy. This will be the flavorful syrup that infuses your ladyfingers.
  • Dip the ladyfingers: Briefly dip a ladyfinger in the matcha soak, coating both sides, and let any excess drip off. Place it in the bottom of a serving container. Repeat this until you have a flat layer of ladyfingers.
  • Layer the cream: Add a layer of the mascarpone cream on top of the ladyfingers and smooth it evenly. This is where the magic starts to happen!
  • Repeat layers: Continue with another layer of soaked ladyfingers followed by another layer of mascarpone cream, ensuring all the components are utilized for a delightful balance.
  • Chill: Cover the tiramisu and chill it in the fridge for at least 4 hours, or overnight if you can wait. This allows the flavors to meld beautifully!
