  • In a medium saucepan, combine sugar, eggnog, and softened butter over medium heat. Bring to a boil and let it simmer for 2 minutes to intensify flavors.
  • Remove from heat, then stir in the rum extract and freshly grated nutmeg.
  • Pour the hot mixture into a bowl, adding marshmallow cream and white chocolate morsels. Stir until fully smooth.
  • Spread the mixture onto a parchment-lined baking sheet and refrigerate for 1-2 hours until firm.
  • Cut the mixture into small pieces and roll into balls, chilling briefly if sticky. Freeze for 1 hour.
  • Melt the white chocolate wafers in the microwave, then dip each truffle in melted chocolate. Tap off excess and place on parchment.
  • Sprinkle with freshly grated nutmeg and refrigerate for 30 minutes to set.

Notes

Optional: Serve with crushed peppermint for a colorful twist. They can be stored in the fridge for up to 2 weeks or frozen for 3 months.
