Ingredients

  • 0.75 cups Sugar Consider substituting with honey or maple syrup for a natural option.
  • 0.5 cups Butter Melted butter incorporates better; vegetable oil can make it dairy-free.
  • 1 large Egg Ensure it’s at room temperature for the best results.
  • 1 teaspoon Baking Powder If you're out, substitute with baking soda, adjusting the amount accordingly.

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease two mini muffin tins.
  • Combine the dry ingredients by mixing together all-purpose flour, baking powder, and a pinch of baking soda in a bowl.
  • Mash the ripe bananas in another bowl until smooth. Then mix in sugar, melted butter, and the egg until well combined.
  • Mix the wet and dry ingredients carefully. Stir gently until just mixed.
  • Fill each muffin cup about 2/3 full with batter.
  • Bake them in the preheated oven for about 12-15 minutes.
  • Cool the muffins in the tin for 5 minutes, then transfer them to a wire rack.
