  • 1.5 pounds cabbage uses crisp, fresh cabbage for that perfect crunch and flavor.

  • 1–2 leeks cleaned and chopped in 1/2 rings, brings a subtle sweetness and aromatic flair.
  • 1 heaping tablespoon ginger minced, adds a spicy, warming element that brightens the dish.
  • 1 tablespoon garlic minced, enhances depth and richness.
  • 0.5 teaspoon salt draws out the flavors of the vegetables.
  • 1 tablespoon toasted sesame oil imparts a nutty aroma and adds that essential Asian flair.
  • 2 tablespoons low sodium soy sauce or tamari adds zest; use tamari for a gluten-free option.
  • 2 tablespoons mirin contributes a touch of sweetness adding balance to the savory flavors.
  • 1 tablespoon rice vinegar brightens the dish with a tangy kick.
  • 3 green onions minced, sprinkle on top for freshness.
  • 0.5 cup fresh cilantro chopped, adds a vibrant touch and aroma.

Instructions
 

  • Heat your wok or skillet over medium-high heat, allowing it to get nice and hot. Stir fry the shredded cabbage without any oil for about 3-5 minutes, until some edges are lightly charred.
  • Push the cabbage to the edges of the wok. In the center, add the avocado oil, chopped leeks, minced ginger, and garlic. Sauté for 1-2 minutes until the leeks are wilted and fragrant.
  • Mix in the salt, toasted sesame oil, soy sauce (or tamari), mirin, and rice vinegar. Stir everything together, cooking until everything is heated through, about another 2 minutes.
  • Fold in the minced green onions and chopped cilantro, giving everything a good toss for an even spread of flavors.
  • Serve your delightful cabbage stir fry over jasmine rice, buckwheat soba, or rice noodles for a wholesome meal that looks as good as it tastes!
