Ingredients

For the Chicken

  • 2 pieces Boneless, skinless chicken breasts Consider using rotisserie chicken for a quicker option.
  • 1 cup Low-sodium chicken broth or water Broth adds flavor; water is lighter.

For the Dressing

  • 1 cup Full-fat Greek yogurt Low-fat yogurt can reduce calories.
  • 1/4 cup Mayonnaise Swap with avocado for a healthier option.
  • 1 tablespoon Dijon mustard Yellow mustard can be used for a milder taste.
  • 1 tablespoon Lemon zest Adds bright flavor.
  • 1 tablespoon Lemon juice Lime can also be a delightful twist.

For the Vegetables

  • 1 cup Celery Cucumber can be used for different texture.
  • 1/2 cup Red onion Green onions can be a milder substitute.
  • 1/2 cup Dill pickles Bread and butter pickles can be used for sweetness.

For the Herbs

  • 1 tablespoon Fresh parsley Any preferred herb can be used.
  • 1 tablespoon Fresh dill Dill pickle spears can also work.

Seasoning

  • 1/2 teaspoon Black pepper Adjust according to preference.

Instructions

Cooking Steps

  • Poach the Chicken: In a pot, combine the chicken breasts and low-sodium broth or water with seasoned salt. Bring to a boil and simmer gently for about 10 minutes, or until the internal temperature reaches 165°F. Let it cool before cutting into cubes.
  • Prepare the Dressing: In a mixing bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, lemon zest, lemon juice, parsley, and dill until smooth and creamy.
  • Combine Ingredients: Gently add the cubed chicken into the dressing, stirring to coat evenly. Fold in the celery, red onion, and dill pickles.
  • Chill and Serve: Refrigerate the salad for at least 30 minutes. Serve as desired.

Notes

Cool the chicken completely before cubing for the best texture. Letting the salad sit overnight enhances flavor.
