How to Make Coconut Chickpea Curry

  • Heat coconut oil in a large skillet over medium heat. Once melted, add chopped onion and sauté for about 8 minutes until soft and translucent.
  • Stir in whole cumin seeds, curry powder, garam masala, and sea salt. Cook for 1 minute until the spices release their enticing aromas.
  • Add canned crushed tomatoes, full-fat coconut milk, minced garlic, grated ginger, and cooked chickpeas. Mix well and bring the mixture to a gentle simmer.
  • Let the curry simmer for 20-25 minutes, stirring occasionally. Adjust with extra water as needed to achieve desired consistency.
  • Remove from heat and stir in lime juice and fresh spinach. Mix until the spinach is wilted. Then, season to your taste.
  • Serve the creamy coconut chickpea curry warm over rice or with naan, garnished with fresh cilantro if desired.
