Ingredients
  

For the Brisket

  • 3-4 lb Corned beef brisket (with seasoning packet)
  • 1.5 tsp Kosher salt to taste
  • 12 oz Lager-style beer or 1.5 cups beef broth + 1 tbsp cider vinegar

For the Vegetables

  • 1 large Yellow onion sweet onion optional
  • 6 cloves Garlic or garlic powder
  • 4 sprigs Fresh thyme or 1 tsp dried thyme
  • 2 Bay leaves optional
  • 1 lb Small red potatoes, halved or Yukon gold potatoes
  • 5 Large carrots, cut into 2-inch pieces or parsnips
  • 1 small head Green cabbage, cut into 8 wedges or Napa cabbage

For Serving

  • Ground black pepper to taste
  • Mustard for serving, optional but recommended

How to Make Corned Beef Instant Pot

  • Set your Instant Pot to sauté mode. Add sliced onions, chopped garlic, minced thyme, and bay leaves until fragrant, about 3-4 minutes.
  • Place the corned beef brisket fat-side up into the pot. Sprinkle the seasoning packet over the meat, then pour lager-style beer around it.
  • Lock the lid of the Instant Pot and set it to high pressure for 80 minutes. Avoid opening during cooking.
  • Once cooking time is up, carefully release the pressure. Remove corned beef to a cutting board and let it rest for a few minutes while reserving 2 cups of the cooking liquid.
  • Add halved potatoes and carrot pieces back into the pot with reserved cooking liquid. Seal and cook on high pressure for an additional 5 minutes.
  • Thinly slice the corned beef and serve it alongside the cooked vegetables. Offer mustard on the side.
