Ingredients
  

For the Ganache

  • 8 oz Dark Chocolate (70% cocoa) Avoid chips due to stabilizers.
  • 4 fl oz Heavy Cream Use cold, full-fat cream for best results.

For Coating

  • 1/2 cup Cocoa Powder (unsweetened) Sift for a smooth coating.

Instructions
 

Truffle Preparation

  • Chop dark chocolate into small uniform pieces and place them in a heatproof bowl.
  • Heat heavy cream in a saucepan over medium heat until it’s steaming but not boiling.
  • Pour the hot cream over the chopped chocolate. Cover the bowl and let it sit for 3-5 minutes.
  • Whisk the mixture until it becomes silky and completely smooth. Refrigerate for at least 2 hours.
  • Sift cocoa powder into a shallow bowl.
  • Scoop the chilled ganache and roll it into balls with slightly damp hands.
  • Roll the formed truffles in the cocoa powder until fully coated.
  • Transfer the truffles to a platter and let them set at room temperature for about 15 minutes.

Notes

Optional: Garnish with a sprinkle of sea salt for an exciting flavor contrast.
