How to Make Fresh Blueberry Muffins

  • Preheat your oven to 400°F (200°C). Line a muffin pan with cupcake liners.
  • In a large mixing bowl, sift together 2 cups of flour, 1 cup of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  • In a medium bowl, whisk the eggs until smooth. Add 1/2 cup of melted butter, 1/2 cup of milk, and 1 teaspoon of vanilla extract.
  • Pour the egg mixture into the dry ingredients. Gently stir until just combined and fold in 2 cups of fresh blueberries.
  • In another bowl, combine 1/4 cup of flour, 2 tablespoons of brown sugar, 2 tablespoons of sugar, 1/4 teaspoon of cinnamon, and 1/8 teaspoon of salt. Cut in 2 tablespoons of cold butter until crumbly.
  • Spoon the batter into muffin cups, filling them about 3/4 full. Sprinkle about 1 tablespoon of streusel topping over each muffin.
  • Bake for 18 to 22 minutes or until a toothpick comes out clean. Cool on a rack before removing from the pan.
  • Allow to cool completely before storing in an airtight container.
