Filling

  • 6 cups fresh peaches peeled and chopped
  • 2 Tablespoons lemon juice
  • 1/2 cup granulated sugar
  • 2 Tablespoons cornstarch
  • 1 dash salt
  • 1/2 teaspoon almond extract

  • 1 9 inch baked pie shell

Preparation

  • Begin by adding the peeled and chopped peaches to a bowl. Sprinkle them with sugar and lemon juice, stirring well to combine. Let them rest for 30 minutes to an hour.
  • Drain the accumulated peach juice into a measuring cup, aiming for about 1 cup. In a saucepan, pour in the juice and whisk it together with the cornstarch. Heat over medium, stirring continuously until the mixture thickens.
  • Once thickened, remove the saucepan from heat. Stir in the butter, salt, and almond extract.
  • Gently pour the sauce over the peaches in a large mixing bowl, tossing them softly to coat evenly. Transfer the peach filling into the baked pie shell, then cover and refrigerate for at least one hour.

Serving

  • Serve with a generous dollop of whipped cream for a delightful garnish!
