Ingredients
  

For the Cupcakes

  • 1 cup Mocha coffee
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar Coconut or brown sugar can be used
  • 2 large Eggs
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 1 cup Milk Almond milk can be used for dairy-free option

For the Frosting

  • 1 cup Chocolate sour cream
  • 2 cups Powdered sugar
  • 1/2 cup Cocoa powder Dutch-processed for deeper taste
  • 1 teaspoon Vanilla extract

For the Toppers

  • 2 cups Marshmallow fondant White and pink colors
  • 2 tablespoons Water or corn syrup

Instructions
 

Cupcake Preparation

  • Preheat your oven according to the cupcake recipe and fill your cupcake liners with the mocha coffee batter. Bake until a toothpick comes out clean, about 20 minutes. Allow them to cool fully on a wire rack.
  • While the cupcakes are baking and cooling, whip up the chocolate sour cream frosting until it’s light and fluffy.
  • Fill a piping bag fitted with a big star tip (Wilton tip 1M) with the chocolate frosting. Pipe a swirl on top of each cooled cupcake.

Fondant Preparation

  • Roll out your white fondant and use a square cutter to cut out little rectangles to represent diplomas.
  • Start rolling the fondant squares from one end to the other to create the rolled-up diploma look.
  • Roll out a thin rope of pink or red fondant and wrap it around the center of each white diploma piece.
  • Use a knife to cut off any excess pink fondant from the ends.
  • Roll another thin rope of pink fondant and shape it into a bow for an adorable touch.
  • Stick the bow in the center of each diploma using a bit of water or corn syrup.
  • Create 24 of these adorable toppers and let them dry overnight or until they harden completely.

Final Assembly

  • Once the toppers are dry and your cupcakes are frosted, place a diploma topper on each cupcake, and enjoy!

Notes

Optional: Dust with edible glitter for an extra touch. Room-temperature ingredients for frosting ensure smooth mixing. Use cornstarch when rolling fondant.
